Executive Chef
Marcus didn't grow up dreaming of being a chef - he kinda stumbled into it during a gap year in his twenties. Started washing dishes at a seafood spot in Halifax, and something just clicked. Fast forward through culinary school, a stint in Montreal, and three years cooking in coastal BC, and here we are.
"I'm not interested in molecular this or deconstructed that," he'll tell you. "Give me a perfect piece of fish and some good produce, and I'll make you something memorable." That philosophy shows up on every plate - there's technique here for sure, but it never overshadows the ingredients themselves.
When he's not in the kitchen, you'll probably find Marcus at the farmer's market on Saturday mornings, chatting up the vendors and figuring out what's gonna inspire next week's specials. He's built real relationships with the folks who grow and catch our food, and honestly, you can taste the difference.
